Not every party needs a planner and a timeline. Some need brisket on the patio by six. Pick the size, then pick the menu, and we build the rest from there. Same kitchen, same sourcing, whatever the headcount.
Backyards, boardrooms, ballrooms. Nothing here is fixed, and nothing here has a price tag until we have talked.
The simple one
Good food. No fuss.
A birthday, a graduation, the whole block on a Saturday. We show up, we cook, we set it out, and we leave your kitchen cleaner than we found it. One or two mains, three sides, sweet tea and lemonade. You handle the playlist.

Team lunches, launches, holiday parties, the offsite. Passed bites while people find their seats, a buffet or stations that keep the line moving, real plates, and a crew in black. Dietary flags tracked by name, the invoice itemized, COI on file before you ask.

Every seat, on time.
Fundraisers, galas, the wedding, the anniversary that gets a ballroom. Cocktail hour with passed bites and a raw bar, a plated dinner that lands at every table inside twenty minutes, a staffed bar, and late-night boxes at the door. One point of contact from the first call to the last chair. The crew grows with the room.

Five complete menus, written start to finish. Any one of them fits any package above. Brisket on the patio or brisket in the ballroom, the only thing that changes is the crew. Rather build it yourself? That is what the à la carte card is for.

Post oak and olive oil, Gulf catch and Hill Country lamb, lemon and fresh herbs. A long table on a warm night. The paella comes out of the fire in the pan it cooked in.

Austin, Lockhart, Taylor, Luling. Eighteen-hour brisket with a black pepper bark, spare ribs, house Wagyu sausage, smoked half chickens. Butcher paper, white bread, pickles. Scales from a backyard to the whole company, carved on site either way.

Head-on Gulf shrimp, blue crab, andouille, corn, and potatoes boiled in Old Bay and dumped straight onto the table. Oysters on ice while you wait. Bibs provided.

Whole cabrito over post oak coals, smoked Fredericksburg lamb shoulder, Bandera quail in cast iron, Broken Arrow venison. Ranchers we know by name, cooked the way they'd cook it.

Carne asada off the mesquite, pollo al carbon, carnitas braised in orange and Mexican Coke, cheese enchiladas in chili gravy. Guacamole made at the table. The border influence runs deep.
