A gala runs on a program, so we do too. Plates down before the speeches and cleared after, a staffed bar, and one contact from the first call to the last chair. Up to 1,200 seated, and the crew grows with the room.
How does the night run?
- Cocktail hour. Passed bites and a raw bar while the room fills and the silent auction does its work.
- Dinner. Plated, so the room is fed before anyone takes the stage.
- The program. We work to your run of show. Plates land before the speeches and clear after, not over the microphone.
- Late night. Late-night boxes at the door for everyone heading home.
Where do we start?
Most galas get a menu written for the night. Start from a menu package, or tell us the room and we write one.
- The Steakhouse. The seated dinner. Plated, timed to the program.
- Cocktail Party. The standing reception. Passed bites and boards, no seating chart.
- Barton Springs. Our signature long table. Four courses passed hand to hand.
- Tex-Mex Spread. Austin on a plate, for a crowd that wants it to taste like home.
What do you bring, and what do you need from us?
We bring: Captains, servers, and a staffed bar. Rentals, linens, and the timeline, coordinated with your venue. Dietary needs tracked by guest. A full breakdown after the last guest.
From you: The run of show. The room. The final count three weeks out.
How does booking work?
- Tell us the date. A few picks in the planner, or one email. Headcount and the place if you have them.
- Get the proposal. A menu built for your crowd within two business days. Swap anything until it reads like you.
- Hold the date. Sign and put down 50%. The date is yours, and nobody else gets it.
- Show up hungry. Final counts three weeks out, the balance two weeks out. We work to your run of show with your venue and committee. You run the room.
One contract for everyone, and the full terms are public on the contract page. No surprises on the invoice.
How many can you seat?
Up to 1,200 seated. The crew grows with the room.
Do you work with our venue?
Rentals, linens, and the timeline, coordinated with your venue. Certificates of insurance and a W-9 on request.
What does it cost?
Every gala gets its own proposal, built to the room and the program. Pick a budget range in the planner and we build to it.
